“Broccoli Cheese Soup” Grilled Cheese Sandwich

Thanks to I found this easy recipe. Check the site out for more recipes too! They have some great stuff. 

  • 2 English Cucumbers, peeled and chopped
  • Juice of one TJ’s Lime
  • 1 container of TJ’s Cilantro & Chive Yogurt Dip
  • 1 cup TJ’s Organic Plain Low Fat Yogurt
  • 1/2 teaspoon TJ’s Sea Salt
  •  Fresh Cilantro for garnish

Puree cucumbers with lime juice in a food processor. Transfer to a mixing bowl. Add dip, yogurt and salt to cucumber puree. Mix until thoroughly combined. Divide into four bowls. Top with fresh cilantro and serve.

Serves: 4
Cooking Time: 10 Minutes

Stuffed Poblano Peppers with Spinach, Monterey Jack, Golden Raisins and Pumpkin Seeds

You could try this with a variety of filling combinations - goat cheese with pine nuts, kale instead of spinach, wild rice or quinoa… the possibilities are endless - go crazy! Crazy with poblanos!

2 Poblano Peppers
1 cup Monterey Jack Cheese, shredded
2-3 cups fresh Spinach, stems removed, leaves ripped small
1 1/2 Tbsp Golden Raisins
2 Tbsp Toasted Pumpkin Seeds
Extra Virgin Olive Oil
1/4 tsp Smoked Paprika
Salt & Pepper to taste 

Preheat oven to 400 degrees.  Line a sheet with aluminum foil and place poblanos on the sheet.  Drizzle lightly with olive oil and rub all sides to coat.  Sprinkle with salt.  Roast in the oven about 15 minutes, or until skin blisters (make sure to turn the peppers so all sides get blistered).  Remove from oven and set aside to cool.  In a bowl, mix cheese, spinach, pumpkin seeds, golden raisins, smoked paprika, salt and pepper.  Once peppers are cool enough to handle, pinch the blistered skin and remove carefully. With a knife, make a length-wise incision and gently scoop out seeds and membranes.  Using a spoon and your hands, carefully stuff the peppers with the spinach & cheese mixture.  Bake in a 350 oven until cheese is melted and bubbly.  Cool slightly and serve.

Cold Noodles

The idea of cold noodles may seems strange, but trust me its really good. I got addicted and am having a craving for some right now! 

Heres what you need:

(serves 2)

  • 9 ounces soba(buckwheat noodles) 
  • 4 teaspoons sesame seeds
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon mirin, apple juice concentrate, or clear honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 4 green onions, shredded

How to make it:

  1. Cook noodles in boiling water for about 4 minutes or until done
  2. Mix sesame oil, mirin, apple juice concentrate or honey, the vinegar, and soy sauce in a bowl to toss with the noodles
  3. Add the shredded green onions and sesame seeds
  4. Eat!
